Old Fashioned Easy Shortbread Biscuits

Ann has sent us in a lovely recipe to make some tasty treats to accompany a nice cup of tea and a good book.

Ingredients Needed:

6 oz Butter

2 oz. Icing sugar

8 oz. Self-raising flour

Method:

Pre-heat oven to 180 C/ 350*F. Grease baking sheets.

Cream the butter and icing sugar together in a bowl until very soft and fluffy.

Gradually stir in the sifted flour and knead lightly.

Roll out to   1/8 – 1/4 inch thickness on a lightly floured surface.

Cut out the biscuits with a plain or fluted cutter, place on baking sheets and bake for 8 to 10 minutes until pale brown. 

Transfer to a wire rack to cool and sprinkle with some sifted icing sugar.
